No Name Quick Non-Corn Cornbread

Ingredients:

6 inch x 6 inch baking pan or double below recipe for a 7 inch x 11 inch baking pan

1 Cup Organic Oatmeal Flour (or Quinoa Flour, or even regular flour, if you so desire)
1 1/2 tsp. Salt
1/2 tsp. Baking Soda
1/3 Cup Half and Half
3 Tbsn. Honey
1 Egg
3/4 Stick of Butter, melted or coconut oil
1/2 tsp. Apple Cider Vinegar

Instructions:

Preheat oven at 325 degrees.
Lightly mix Oatmeal Flour, Salt, and Baking Soda in a large bowl. On stove, melt butter (or use coconut oil) and then let cool. In a small bowl, combine and thoroughly mix the rest of the wet ingredients. Then pour wet ingredients into large bowl with the dry ingredients. Stir no more than 50 times. Pour batter into greased cake pan. Bake for 25-30 minutes, depending on oven.

Cut and serve with honey, agave, or maple syrup. Enjoy!
