Today Isn’t Cooking Thursday But We’re Baking Anyways: Vegan Gluten-Free Chocolate Chip Quickbread

7-Step Gluten-Free Chocolate Chip Quickbread

1) Combine these ingredients:

1/2 Cup Almond Flour
1/2 Cup Rice Flour
1 1/2 tsp. Salt
1/2 tsp. Baking Soda

2) Combine these ingredients:

3 Tbsp. Honey (or Maple Syrup to make it vegan)
1/2 tsp. Apple Cider Vinegar
1/3 Cup Half and Half or Coconut Milk
1 Egg
1/3 Cup Olive Oil

3) Combine all ingredients in a bowl.

4) Gently stir in 1/2 Cup Semi-Sweet Chocolate Chips

5) Pour mixture into a 6 x 6 inch pan (you can also double the recipe for a 7 x 11 inch pan).

6) Bake at 350 degrees for 15 to 20 minutes (oven temperatures and baking time may vary).

7) Let cool and slice. Enjoy.
